Scallops caught in the waters off North Uist and Harris are landed at the
small harbour of Kallin and the best reserved for us. They are lightly smoked and given the gentlest of cooking in the
kiln before being hand sliced and vacuum packed.
Ready to eat, these naturally sweet shellfish are wonderful on their own
or as an accompaniment to mushroom risotto, with blini and crème fraiche
or a finishing touch to a warm asparagus salad.
