Generally when selecting wine it is a good idea to select wines that possess a full bodied character such as good white Burgundy from Mersault or St Aubin or, from the same grape variety, chardonnays from the better producers in the New World such as Penfolds or Wolff Blass.

The other natural partner to our salmon is peaty malt whisky and the whiskies from Islay on the Scottish West Coast fit the bill perfectly. Of all the malt whiskies produced in Scotland it is these that can, from the nose alone, transport you to West Highland villages and the reek of peat burning from chimneys in the early evening.
