When buying for a first course, we recommend 100-125g for two people and 200-250g for four if you are buying packets of slices.

When buying a side of salmon or seatrout allowance needs to be made for the weight of the skin and some of the meat that is unsuitable for serving as slices. We would suggest you allow 75g per person from a trimmed and sliced side and about 80g per person from an unsliced side.

We can supply sides of salmon up to about 2 kilograms in weight, and sometimes larger so please contact us at the smokehouse if you require any size greater than those shown.


We recommend 130g of Hot smoked salmon per person purchased either as portion pieces or whole sides.


Peat Smoked Scallops are rich in flavour and a 100g packet of slices will be sufficient for two people as a first course. These delicious shellfish, like the Peat Smoked Seatrout, do not benefit from powerfully flavoured accompaniments.
